If you are looking for a Quick and Easy, Nutritious Lunch (or even dinner when dieting down) you could try this: Tuna Onion Potato Lunch Ingredients: 1 small potato diced or cubed I use a French Fry slicer like this which makes this a 2 second process equal or smaller amount of onion 1/2 tin of Tuna Steam the potato and onion for 12-15 minutes Add the 1/2 tin of tuna to a bowl When the potato and onion are cooked add them also and blend, smash or mash the three together as you like. You may also want to make the following sauce: 2/3 mayonaise (made with Olive Oil) 1/3 Virgin Olive Oil Stir until blended and dip your fork into sauce to add to each bite. This is a really good mixture of carbs, protien, oils, and other quality nutrients in a tasty, low calorie and easy to make dish. It is one of my favorite Lunch meals. Also, be creative. Obviously you could substitute or add other vegetables or protien such as canned Salmon or Chicken.
